My project is based on the recovery of old Garnatxa vines in Navarra and La Rioja.
I grow responsibly. I don't use HERBICIDES, life in the soil is important. The balance in the middle is too. I don't use INSECTICIDES, we need biodiversity to maintain balance. It is important to be respectful with the ENVIRONMENT. In trellised crops, we normally till 2 times a year. In the vessels, the vegetation control is carried out only by mowing with a brush cutter.
I make the wines in an absolutely ARTISAN way with yeast and INDIGENOUS bacteria. I slightly control the fermentation temperature, always looking for the lowest extraction. I avoid CLARIFYING the wines and we only filter gently on rare occasions. Stabilization is done in a NATURAL way, cold and weather are our allies. We do not make up the wines. I think it is the way to reflect the soil and the environment of each vineyard
