My wine is not filtered and comes from the spontaneous fermentation of grapes grown without the use of herbicides, pesticides or other synthetic substances while respecting the environment.
The “Il Cavallino” farm was founded many years ago on the hills of the Berici Hills as a cattle breeding activity. My father Lino Maule, a man of great experience and love for horses, followed this activity wisely. In 2010, with the purchase of old family lands in Selva di Montebello and Gambellara, the company began its activity which in 2011 produced the first bottles of wine, in the following years new vineyards were planted in San Germano dei Berici with the Tai Rosso and Merlot varieties.
The treatments of the vineyards we use only copper and sulfur and every year we experiment with new corroborating substances to try to lower the doses of the latter.
In the cellar, the philosophy is the same, we do not add any substances or selected yeasts, fermentation is spontaneous and sulfur dioxide is added in small quantities only when necessary (with residues in the final wine that never exceed 35 mg / l).
